Abstract:This review mainly introduced a kind of deacetylating Chitin, that is, oligosaccharide of Chitin. It came from Chitin deprived of acetyl. Chitin was a green biology material whose reserve was abundant in nature. This review laid emphasis on preparation, functionality, application and development foreground of oligosaccharide of Chitin.
