摘    要:红花黄色素是从干红花的花叶中提取的一种天然营养型食用色素,也有很好的药理作用,可用于治疗冠心病、高血压等疾病。这种色素稳定性较好,避光室温保存有效期最少可达30天,该色素含有一定的热稳定性,在80℃时也可稳定存在几个小时。在3

Abstract:The safflower yellow pigment is a kind of natural nutritional type edible pigment extracted from dry safflower,and has medicinal effect.It is used to cure many kinds of illness,for example,high-blood-press.The stability of yellow pigment is well,it well be still stable in 30d.If it be put in room,it is stable to heat,the pH range 3-7,oxidizing and reducing agent and metal(except for Fe Zn) have no undesirable effect on its stability and color the studying on the stability of yellow pigment can be helpful for development of the yellow pigment and apply optimal conditions to industrial production.
