摘    要:以大豆分离蛋白、β-环糊精为壁材,元宝枫籽油为芯材,单硬脂酸甘油酯为乳化剂,通过喷雾干燥法制备微胶囊化元宝枫籽油粉末油脂.在温度170℃的条件下,考察了壁芯比、复配壁材比例、壁材浓度对微胶囊化元宝枫籽油粉末油脂包埋率的影响,通过正交试验确定最佳工艺条件为壁芯比为4∶1(g/g)、β-环糊精与大豆分离蛋白的壁材配比为3∶...

Abstract:Microencapsulated Acer truncatum seed oil powder was prepared by spray drying with soybean protein isolate and Cyclodextrin as wall materials,Acer truncatum seed oil as core material and Monostearin as emulsifier.Under the condition of 170℃,the effects of wall-to-core ratio,the proportion of compound wall materials and the concentration of wall materials on the entrapment efficiency of microencap-sulated Acer truncatum seed oil powder were investigated,the optimum technological conditions were determined by Orthogonal test as 4∶1(g/g),3∶2(g/g)and 7∶1(mL/g).Under this condition,the entrapment efficiency of Acer truncatum seed oil powder oil was 56.83%,and the entrapment efficiency was perfect.
