摘    要:人类文明,源于饮食,文化史的基石是饮食文化,研究中国古代文化史,必须首先研究人类历史“第一前提”的饮食。具有典型的东方农业文明特色的中国古代饮食文化是世界上最发达、最精深的,当时所确立的以粮食为主,蔬菜次之,辅以一定量的肉类、鱼类的饮食结构,是非常科学而合理的,已被现代科学研究证明极其有利于人体健康。汉唐时期奠定了中国古代饮食文化的基本模式。研究中国古代饮食文化史是为了更好地总结我国饮食生活的经验教训,取其精华,去其糟粕,为进一步提高与改进我国人民的饮食生活,为我们今天的物质文明和精神文明建设提供借鉴。

Abstract:Human civilization derives from food and dietetic culture is the cornerstone of cultural history. The priority of the research into cultural history in ancient China may go to dietetic culture as the first premise in human history. The dietetic culture in ancient China bearing typical oriental agricultural characteristics is the most developed and profound. The dietetic structure, in which grains rate the first and vegetables rate the second with meat and fish as supplement, proves to be scientific and reasonable, and therefore beneficial for human health. The basic mode of dietetic culture was established in Han and Tang Dynasties. The present research is intended to make a summary in this field, to keep its essence and discard its dross for further improvement of people's living standard and to foster both material progress and cultural and ethical progress.
