摘    要:纳米模拟酶因具有高稳定性、低成本和易于表面改性等优点,在某种程度上已成为天然酶的新兴替代品。本文简要总结了近年来新型纳米模拟酶的特点和新型纳米模拟酶材料的种类,重点介绍了金属模拟酶、金属氧化物模拟酶、碳材料模拟酶及纳米酶复合体、金属有机框架和生物质复合型纳米酶等新型纳米模拟酶在食品安全分析领域的最新研究进展,并对新型纳米模拟酶的未来挑战和前景进行展望。

Abstract:Nano-enzyme mimetics possess the advantages of high stability,low cost and easy surface modification,and have become emerging alternatives to natural enzymes to some extent. In this paper,the characteristics of the novel enzyme mimetics and the types of nanomaterials-based enzyme mimetics are summarized briefly,and the recent research progress of novel enzyme mimetics,such as metal enzyme mimetics,metal oxide enzyme mimetics,carbon material enzyme mimetics and nanozyme complex,metal-organic frameworks and biomass complex nanozymes in the field of food safety analysis are highlighted. The future challenges and perspectives towards novel enzyme mimetics are also prospected.
