摘    要:食物过敏已经成为全球性的食品安全问题,引起了广泛的关注。研究发现,明确食物过敏原的种类并远离食物过敏原仍是解决食物过敏的最有效途径,鉴于此食物过敏原检测技术具有重要的现实意义。本文结合目前食物过敏原相关检测技术,探究了基于蛋白质和核酸的食物过敏原检测技术的新发展与新应用,并通过解析国内外相关研究成果,探讨了食物过敏原检测技术的发展瓶颈与未来的发展前景,旨在为食物过敏防控和消费者健康提供支撑。

Abstract:Nowadays,food allergy is regarded as a global food safety issue and has been attracted wide attention.It was found that the identification and avoidance of food allergens were still the most effective method to control the food allergy.Thus the food allergen detection technology has important practical significance.In this paper,the new development and application of food allergen detection technology based on the protein and DNA were presented with the related current detection technologies.Meanwhile,the development bottleneck and future prospect of food allergen detection technology were also discussed through the relevant research data across the entire world.The present review was to provide essential supports for food allergy control and ensure the health of consumers.
