摘    要:目的评价本市辖区内常用2种食品快速检测产品各6类理化项目的指标符合性和适用性。方法采用基质加标方式制备盲样,分别对2种快检仪器的亚硝酸盐、硝酸盐、硫酸铝钾、硼砂、二氧化硫、甲醛共6种常见理化项目相应试剂盒进行测试,以测试结果的灵敏度、特异性、假阴性率、假阳性率为性能指标,同时考察试剂盒实际操作过程中的适用性。结果本次评价2种产品各6类理化项目中仅有1个产品的1个快检项目的宣称检出限符合相应国标检出限要求;部分产品存在操作复杂、稳定性差、结果判断困难等问题。结论综合考虑产品指标符合情况及实际监管工作需求, 1个快检项目满足现场食品快检监管,其他化学比色类快检产品需进一步改进和提升技术参数。

Abstract:Objective To evaluate the conformity and applicability of 6 physical and chemical items by 2 commonly used food rapid detection products in the municipality. Methods Blind samples were prepared by matrix standard addition method. The corresponding kits of 6 kinds of common physical and chemical items such as nitrite, nitrate, potassium aluminium sulfate, borax, sulfur dioxide and formaldehyde of 2 kinds of rapid detection equipment were tested. The sensitivity, specificity, false negative rate and false positive rate of the test results were taken as the performance indicators, and the applicability of the kit in the actual operation was also investigated. Results In this evaluation, the declared limit of detection of 1 fast inspection item of only 1 product in each of the 6 physical and chemical items of the 2 products met the requirements of corresponding national standards. Some products had problems such as complicated operation, poor stability and difficulty in judging results. Conclusion After comprehensive consideration of the conformity of product indicators and actual supervision requirements, one quick inspection project meets the requirements of on-site food inspection and supervision, and other chemical colorimetric quick inspection products need further improvement and upgrading of technical parameters.
