摘    要:亚麻籽蛋白含有人体所必需的八种氨基酸,其氨基酸模式与大豆蛋白相当,是一种优质的植物蛋白。本文综述了亚麻籽蛋白及其活性肽的研究进展,详细阐述了亚麻籽蛋白的功能特性以及活性肽的生理活性,并对亚麻籽蛋白及其活性肽的提取制备方法进行了综述。

Abstract:Flaxseed protein is a kind of high quality plant protein,and it contains eight kinds of amino acids,which are necessary for human body.Its amino acid pattern is similar to that of soy protein.In this paper,the research progress of flaxseed protein and its bioactive peptides was reviewed.The functional characteristics of flaxseed protein and the physiological activity of bioactive peptides were elaborated in detail. The extraction and preparation methods of flaxseed protein and its active peptide were also summarized.
