雪莲果保健啤酒的研制

摘    要:雪莲果能有效降低血糖和血脂。在啤酒生产过程中,适量加入雪莲果汁,研制生产出具有保健作用的雪莲果啤酒。在前发酵结束后加入已灭菌的果汁,果汁添加量为体积分数8,前发酵温度为12℃,后发酵时间为7d时,啤酒的风味最佳。

Abstract:Saussurea involucrata fruit has heahhcare functions of lowering blood lipid and blood sugar. By adding suitable quantity of saussurea involucrata fruit juice in the process of producing beer, we developed a new type of beer with healthy function. The beer has best flovour with the following condition: the 8% sterilized juice was added after the primary-fermentation; the primary fermentation temperature was 12 ℃,. When the after fermentation time was 7d, best flavor beer was obtained.
