Abstract: | Carotenoids are phytonutrients, the nutritional elements responsible for the distinctive color of fruits and vegetables. Today, it is recognized that carotenoids from a-carotene to zeaxanthin may have a variety of functions that contribute to good health. This article illustrates its antioxidant functions against cancer, cardiovascular diseases and free radicals. |
