摘    要:该文简要介绍目前我国油脂抗氧化剂概念、种类及主要抗氧化剂安全性问题,重点阐述油脂抗氧化剂分析检测方法,如比色法、气相色谱法、液相色谱法及电化学分析法等原理、优缺点和应用现状;其中高效液相色谱法是应用最广、检测限较低、灵敏度和精确度较高方法,而电化学分析法则是检测程序最简单、灵敏度较高、检测最快速方法,应用潜力巨大;油脂抗氧化剂快速准确测定对油脂氧化稳定性评价具有重要意义。

Abstract:This article gave a brief introductory discussion on the concepts,variety,characteristics and their safety of the antioxidants.The review focuses on the progress of various analytical techniques in- eluding colorimetric method,high-performance liquid chromatographic(HPLC)method,gas chro- matographic(GC)method,electrochemical analytical method for the determination of antioxidants in oil and fat.The advantages and disadvantages and application fields of various methods are analyzed. HPLC method is the most popular one with a lowest detection limit,a good sensitivity and accuracy, and the electrochemical analytical method is the most potential one with a simple and fast procedure and a good sensitivity and accuracy.Fast accurate determination of antioxidants is tremendously significant for the evaluation of the oxidation stability ofoil and fat.
