摘    要:建立了分光光度法检测酒糟中氨态氮的方法,并对芝麻香型白酒蒸馏前后酒糟中氨态氮的含量进行了检测。测定酒糟中氨态氮的相对标准偏差(RSD)为2.81%~3.85%,回收率为101.31%~104.45%。该方法具有操作简便,精密度好,准确度高的特点,可用于日常芝麻香型白酒酒糟中氨态氮的检测并指导优化芝麻香白酒生产工艺。

Abstract:A method for the determination of ammonia nitrogen in distillers grains by spectrophotometry had been established. It was used to measure the content of ammonia nitrogen in distillers grains before and after the distillation of Zhimaxiang Baijiu. The relative standard deviation(RSD) of ammonia nitrogen was 2.81 % to 3.85 %, and the recovery rate was 101.31 % to 104.45 %. This method has the characteristics of simple operation, good precision and high accuracy, and it could be used for daily detection of ammonia nitrogen in distillers grains and for guiding the production of Zhimaxiang Baijiu.
