摘    要:以优质窖泥为基础,生产复合窖泥功能菌液,应用于浓香型白酒生产的粮醅发酵中。结果显示,浓香型白酒发酵中添加复合窖泥功能菌液可升高发酵温度,提高原料的利用率,同时己酸乙酯的生成量高于对照组40%;在“增己降乳”方面,发挥作用显著,且对浓香型白酒的口感有较好的改善。

Abstract:Based on high-quality pit mud,a kind of compound functional bacterial fluid was prepared,and applied in the production of Nongxiang Baijiu.The results revealed that the use of the compound functional bacterial fluid could raise the fermentation temperature,and could improve the utilization rate of raw materials.Meanwhile,the yield of ethyl captoate with the addition of the compound functional bacterial fluid was 40%more than that of the control group.The compound functional bacterial fluid played an important role in increasing ethyl captoate content and reducing ethyl lactate content,and improved the taste of the produced Baijiu.
