摘    要:保健黄酒是特种黄酒的一种,本文主要从保健黄酒的功能因子来源及其酿造工艺对近年来保健黄酒的研究与开发进展进行了综述,并对目前保健黄酒的研究现状及消费市场上的问题进行了分析,以期为后续发酵型保健黄酒的研究与开发、功能性成分检测分析及其质量体系的构建提供参考。

Abstract:Healthcare Huangjiu is a special Huangjiu product. In this paper, the research progress in the development of healthcare Huangjiu in recent years were reviewed from the perspective of functional factors and brewing techniques. In addition, the present research situations of healthcare Huangjiu and the existing problems in its consumption market were analyzed, which could provide references for the subsequent development, the detection of functional components and the quality system construction of healthcare Huangjiu.
