摘    要:根据GB 5009.208—2016食品安全国家标准食品中生物胺的测定,对葡萄酒中组胺含量进行检测,并采用GUM法评定测定结果的扩展不确定度。根据计算公式分析不确定度来源,建立测量模型和不确定度来源因果图,计算出各不确定度分量,找出对组胺检测不确定度影响较大的因素并加以有效控制,对提高葡萄酒中组胺检测结果的准确度具有重要意义。

Abstract:Histamine in wine was measured according to the provisions of histamine measurement in national standard GB 5009.208—2016.The expanded uncertainties in the measurement were analyzed by GUM method.The uncertainty sources were analyzed according to the formulas,and the mathematical model and the cause-effect diagram of the uncertainty sources were set up.Through calculation of each uncertainty component,the main factors influencing the uncertainties in histamine measurement were found,then effectively controlled.The study was of great significance in improving the measurement accuracy of histamine in wine.
