水产蛋白源螯合肽的研究进展

摘    要:饮食中矿物质元素缺乏可引起多种疾病,造成严重的机体功能失调,营养专家建议人们在日常食用具有促进矿物质元素吸收功能的食品。从健康及饮食偏好角度考虑,食源性矿物质元素补充剂更易被人们所接受,成为近年研究的热点。食源性螯合肽是潜在的能够促进矿物质元素生物利用度的功能成分,具有良好的开发应用前景。随着我国水产加工业的快速发展,每年都会有大量加工副产物被丢弃。从这些加工副产物中制备水产蛋白源螯合肽,不仅能够推进水产加工的高值化利用,还可为食源性矿物质元素补充剂的开发提供新途径,具有重要的社会和经济效益。本文系统收集目前国内外相关研究报道,对水产蛋白源螯合肽的酶解制备、分离纯化、构效关系及生物活性进行了概述。

Abstract:Deficiencies of dietary minerals in the diet can lead to various diseases, causing severe body dysfunction. Nutrition experts recommend that people can eat foods that promote the absorption of mineral elements in their daily diets. There has been increasing attention to food-derived mineral supplements in recent years since they are more acceptable from general health considerations and dietary preferences. Food-derived chelating peptides have been considered to be the potential functional ingredients to enhance the mineral bioavailability, and therefore possess promising prospects in exploitation and utilization. With the rapid development of aquatic product processing industry in our country, a large quantity of aquatic processing by-products are abandoned each year. Preparation of aquatic protein-derived chelating peptides from these by-products can not only accelerate the high-value utilization of aquatic processing, but also provide a novel approach for the development of food-derived mineral supplements, which has good economic and social benefits. According to current correlative research from home and abroad, this paper reviewed the research progress on the enzymatic preparation, separation and purification, structural-activity relationship and biological activity of aquatic protein-derived chelating peptides.
