天津大米超长期贮藏的醛系物积累与调控研究

摘    要:以天津地区特产的小站稻大米为试材,重点研究影响大米品质、风味的醛类挥发性物质的代谢积累规律与调控效果,研制筛选天津大米常温MA保鲜专用保鲜袋。结果表明,天津小站稻大米3年超长期贮藏时,醛类挥发性物质的主要成分是乙醛、戊醛和己醛,依次在0.5、3.0和6.0这3个保留时间出现峰值;塑料薄膜MA小包装处理,对天津小站稻大米醛类挥发性物质的代谢积累有显著的调控作用,其中厚度0.05mmPVC保鲜袋效果最佳,贮藏3年的醛类挥发性物质代谢积累总量12.131mg/kg,相当于对照64.832 mg/kg的18.7%。

Abstract:Taking Xiaozhan Rice,a special local product in Tianjin area,as experimental material,the work is focused on the metabolism accumulation of volatile Aldehyde components which negatively influence rice quality and flavor,in order to select preservation bag of atmosphere storage film(MA) for rice storage at normal temperature.It is found that during an extended storage of 3 years,the volatile Aldehyde components accumulated in the stored rice are mainly acetaldehyde,valeraldehyde and hexanal,with each peak value respectively appearing at the storage period of 0.5,3.0 and 6.0min.Small packing with MA has obvious function in regulating the metabolism accumulating of the volatile Aldehyde components in the rice,and PVC of thickness 0.05mm exhibits the best with the following record: the total accumulated volatile Aldehyde components in an extended storage of 1180d is 12.131 mg/kg,corresponding 18.7% of 64.832mg/kg of the control.
