摘    要:酶法水解制备的抗氧化多肽具有螯合金属离子,捕捉自由基和抗氧化作用。该文阐述了酶解蛋白制备抗氧化多肽的意义和国内外研究现状,对抗氧化机理和研究过程中存在的问题进行了分析,并对其开发应用前景进行了展望。

Abstract:Antioxidative peptides prepared by enzymatic hydrolysis of proteins are able to chelate metal ions, catch free radicals and resist oxidation. The significance and current research of antioxidative peptide preparation from enzymatic hydrolysis both at home and abroad were discussed, the antioxidative mechanism and the problems during research were analyzed, and the perspective of development and application were reviewed.
