我国企业在食品中使用植物原料的问题调查与建议

摘    要:目的了解我国食品企业在植物原料使用中的实际情况及困惑,总结我国植物原料在食品中应用时存在的问题,提出完善植物原料的管理模式的建议。方法采用电子问卷调查法对企业信息、植物原料情况(植物原料名称、引种情况、食用历史、在食品中应用情况、功效作用、不建议食用人群等)、对管理的建议(是否建议制定标准)进行问卷调查,并分析结果。结果本研究涉及我国11个省份的食品企业,共回收有效问卷117份。从使用情况来看,应用在工业化食品中的有94次填报,其中在液体饮料中使用最多;应用在烹饪、餐饮中的有23次填报,其中用作煲汤或与其他食品炖食的最多。从管理建议来看,建议制定食品安全地方标准进行管理的有49次填报。结论问卷反映了我国食品企业对于植物原料使用的问题,通过与欧盟、美国、澳大利亚、新西兰的植物原料管理模式的对比,总结可以借鉴之处,同时企业应当加强对植物原料背景信息的研究,突出行业协会的协同作用,同时对食品安全地方标准应当科学定位。

Abstract:ABSTRACT: Objective In order to understand the actual situation and confusion of Chinese food enter-prises in the use of plant raw materials, summarize the problems existing in the application of plant raw materials in food in China, put forward the suggestions for improving the management mode of plant raw materials. Method This paper adopted the electronic questionnaire survey method and distributed through industry associations. The questions in the questionnaire involve enterprise information, plant raw material use (name of plant raw material, planting situation, food history, application in food, efficacy and function, people who are not recommended to eat it, etc.), and Suggestions on management (whether it is recom-mended to establish standards).This paper used Microsoft Excel 2019 for data export and collation, and. SPSS 23.0 for data analysis. Results This survey involves food enterprises in 11 provinces in China, and 117 questionnaires were returned. In terms of usage, 38 kinds of plant raw materials are used in industrialized food production, and most used as liquid beverage. There are 11 kinds of applications in cooking and dining, and making soup or stewing with other food. From the perspective of management Suggestions, there are 49 kinds of raw materials that enterprises suggest to establish local food safety standards for management. Conclusion The questionnaire highlights that there are still some problems in the use of plant raw materials by Chinese food enterprises. By comparing the plant raw material management models of The European Union, the United States and Australia and New Zealand with those of China, it is suggested that the man-agement model of plant raw materials such as Australopithecine can be used for reference in the future. En-terprises should strengthen the research on the background information of plant raw materials, highlight the synergistic effect of industry associations, and treat the local food safety standards in a scientific and rea-sonable way.
