低聚果糖与脂肪酸酯缔合行为的研究及在低度白酒中的应用

摘    要:运用电导法测定了在体积分数为38%的乙醇溶液中低聚果糖(简称FOS)对脂肪酸酯水解速率常数的影响,推导并验证了定量表达酯水解速率常数(k)与FOS浓度(M)关系的数学表达式:k=k′/(1+AM),得出了FOS对脂肪酸酯水解反应起禁阻作用的结论。

Abstract:In this work,the effects of fructooligosaccharides(FOS) on hydrolysis rate constants(k) of aliphatic esters from 38%(v/v) ethanol solution were studied by conductometry.The quantitive relationship between hydrolysis rate constants(k) of esters and the concentration of FOS(M) could be expressed as: k= k′/(1+AM).The result showed that FOS inhibited the hydrolysis reaction of aliphatic esters.
