戊聚糖在小麦中的分布规律及其与灰分、白度相关性的研究

摘    要:本文以河南省内广泛种植的6种不同硬度的小麦及2种国外小麦(加拿大硬麦和美国软麦)为原料,研究戊聚糖在小麦籽粒中的分布,戊聚糖与灰分、白度之间的相关性。研究表明:戊聚糖在小麦籽粒的分布具有不均匀性,内部含量较少,外部含量较高;戊聚糖与灰分之间有较好的正相关性;与白度之间有较好的负相关性。

Abstract:SIX KINDS OF WHEAT CULTIVATED BROADLY IN HENAN PROVINCE AND TWO KINDS OF IMPORTED WHEAT (CANADIAN HARD WHEAT AND AMERICAN SOFT WHEAT) WERE USED AS STUDY MATERIAL.THE DISTRIBUTION OF PENTOSAN IN WHEAT KERNEL AND ITS RELATIONSHIP WITH WHEAT ASH CONTENT AND FLOUR WHITENESS WERE STUDIED.THE RESULTS SHOWED THAT PENTOSAN CONTENT IN THE OUTER PART OF A WHEAT KERNER WAS HIGHER THAN THE INNER PART.THE STUDY INDICATED THAT PENTOSAN HAD POSITIVE CORRELATION WITH ASH CONTENT AND NEGATIVE CORRELATION WITH FLOUR WHITENESS.
