| 摘 要： | 从考古发掘酒窖垂直分布的叠压堆积层和微生物学研究成果两方面，证实了水井坊是罕见的连续发酵生产使用几百年的古老酒坊。水井坊考古所建立的学术方法，为中国白酒考古树立了良好的模式，建立了白酒考古这个新的学术领域，其他白酒遗址相继发现，使中国白酒的史学研究从书本和传说走上了实证之路。

| Abstract: | Both the vertically distributed stacking accumulation horizon in pits(archaeological discovery) and the microbiological research achievements proved Shuijingfang a rare ancient distillery with several hundred years of continuous fermentation & production history.The academic methods initiated by Shuijingfang Archaeology Institute had become a good model for liquor archaeology in China,which opened a new academic field-liquor archaeology.The successive discovery of other liquor-making relics had upgraded historic study of liquor in China from written records and legends to positivism.(Tran.by YUE Yang) |
