| 摘 要： | 通过对栗子皮色素的提取和理化性质的研究,结果表明该色素水溶性好,耐光照,耐热性能好,氧化剂对色素有一定的降解作用,耐还原能力较耐氧化能力强。

| Abstract: | By recovering of chestnuts pigment and researching of the property of its physical and chemistry, it has turned out that the aqueous property of this kind of pigment, the illumination resistance and the heat resistance are good, and that the oxidizer can resolve this kind off pigment, and that the a-bility of reducible resistance is stronger than that of the oxidizer resistance. |
