生物阻抗技术及其在肉品质检测中的应用

摘    要:介绍了生物阻抗分析方法和生物阻抗频谱分析方法的基本理论。综述了现阶段生物阻抗技术在肉品品质检测中的应用情况和发展趋势。现有研究结果表明:通过检测肉品组织阻抗谱可以分析肉品中脂肪、水分、嫩度等品质因素,还可以辨别PSE肉。研究发现,阻抗技术应用于品质检测时将受到一些因素的影响,如,畜体屠宰后的测量时间、不同的组织和同一组织的不同测量部位与驱动电流流过组织的方向,在今后的研究中应注重这项检测技术的标准化,以减少这些因素对测量准确性的影响。

Abstract:The principles and the performances of electrical bioimpedance measurement technology are discussed.Development trend and application of bioimpedance measurement technology in detection of meat quality are reviewed.The technique is a suitable tool for the assessment of meat fat,water content,tenderness and the discrimination between normal suited meat and PSE meat.However,there are a few influences on detecting meat quality using this method,e.g.testing time post-mortem,measuring point,and direction of driving source current.The standardization of this technique must be taken into account to improve the accuracy in the future.
