水液压超高压处理技术的优势与挑战

摘    要:超高压处理技术目前广泛用于食品杀菌、改性与提取,针对液体食品的特殊性,提出一种新型绿色的超高压生物处理技术。该技术以绿色环保的水液压技术替代传统的液压系统,同时以液态食品本身直接作为压力传递介质。文中主要对该技术的市场前景及面临的技术挑战进行了总结与分析。

Abstract:Ultra-high pressure processing technology is widely used in food sterilization, modification and extraction at present.For the particularity of liquid food, a new type of green ultra-high pressure biological processing technology was proposed.For the novel technology of green and environmental protection, water hydraulic technology was used to replace the traditional hydraulic system, and the liquid food itself was treated as pressure transmission media directly.The market prospect and challenge faced of the technique were summarized and analyzed mainly.
