膜技术在乳品工业中应用的最新进展

摘    要:综述了膜技术的特点、分离机理、分类和在乳品工业中的应用,以及膜技术在乳品除菌、回收产品、乳清脱盐、牛乳的浓缩、乳蛋白浓缩、乳蛋白质分级分离、乳的标准化以及在酸乳和干酪制造等方面的应用。阐述了膜分离技术可简化生产工艺、提高效率、提高乳成分综合利用率,而且可以降低能耗、减少废水污染,因而具有显著的经济效益和环保作用,具有很好的发展和应用前景。同时也对存在的问题进行了分析。

Abstract:The characteristics, theory and classification of membrane and its application to dairy industry was discussed. The application on processing of dairy products including milk degerming, by-products recovering, whey demineralization, milk concentration, milk protein concentration, milk protein separation, milk standardization, yoghurt and cheese producing were reviewed as well. It showed that membrane technology could simplify the processing procedure, improve the efficiency and utilization of milk components, reduce the energy consume and sewage contamination. Because of its economic benefit and environmental protection effect, membrane technology has a promised prospect. Meanwhile, the present problems in the application were also briefly analyzed.
