Abstract: | A proposed formula for modifying buffalo milk for infant feeding was described. Buffalo milk was diluted with four parts of whey that was produced by addition of citric acid or lemon juice to milk and neutralization with sodium bicarbonate. The chemical composition and the properties of the proposed formula were compared with raw buffalo milk, human milk and buffalo milk modified by the ordinary method. The proposed formula was characterised by low casein/whey protein N comparable to human milk and by curd tension. |
