| 摘 要： | 本文建立了油料蒸炒过程的热流方程式,用差分数值解法求解了油料温度场.通过该模型,可以方便地分析立式蒸炒锅对油料蒸炒过程加热强度的要求.

| Abstract: | The paper builds up the equation of heat flow for the course of cooking oil crops and the temperature field of oil crops in the cooker is solved satisfactorily by means of numerical difference method. Through this model, it is convenient to analyse the heat intensity for oil crops in the vertical cooker. |
