响应面法及其在食品工业中的应用

摘    要:响应面法(Response urface Methodology)是利用合理的试验设计方案,采用多元二次回归方程拟合因素与响应值之间的函数关系,通过对回归方程的分析优化工艺参数,预测响应值的一种统计方法。本简要介绍响应面法的几种常用设计方案,并对其在食品工业中的应用进行综述。

Abstract:Response Surface Methodology is used to establish fu nctional relationship between responses and factors and to obtain polynomial qua dratic regression equations by reasonable experimental designs.The equations are analyzed to obtain the optimal process parameters and to predict the responses. Several usual design types of response surface methodology are introduced and th eir applications in food industry are summarized in this paper.
