摘    要:建立一种测定腊肉中游离脂肪酸(FFA)组成及含量的方法,以Amberlyst-26阴离子交换树脂分离纯化腊肉中的FFA,用十五烷酸(C15:0)作内标,以BF3-CH3OH、苯、甲醇为甲酯化试剂,将得到的甲酯化产物用正己烷萃取后进行气相色谱分析,所采用的色谱柱为毛细管石英柱(FFAP型)。各脂肪酸浓度在4~32mg/mL范围内具有良好线性关系,对各次加入不同量C12:0、C14:0、C16:0、C18:0、C18:1的回收率为93.91%~95.71%,重复性实验中各脂肪酸的变异系数CV%为1.77%~3.82%,方法可靠。

Abstract:Amethod for determination of the fre e fatty acid in bacon was founded .FFA s in bacon were purified by Amberlyst -26(A-26)strong basic anion exchanger resin,using C 15:0 as internal standard(IS),FFAs were catalysed by boron triflu o-ride -methanoland converted into th e methylester,finally determined b y GC.The result proved that the recovery,precision and linear ofrelationship of the method were perfect,so believed thatthe me thod was reasonable to determine the FFAs in Bacon.
