摘    要:以恩施市富硒小麦粉为原料,对生产富硒谷朊粉的工艺过程进行了探讨。检测了富硒谷朊粉的营养成分及硒的含量。经检测,富硒谷朊粉的硒含量为0.578mg/kg。

Abstract:Taking the wheat flour rich in Se growing in Enshi City as a main raw material, the author approaches the technological process in propducing gluten flour rich in Se. The nutritious composition and the content of Se of gluten flour rich in Se are determined . The content of the Se of gluten flour rich in Se is 0. 578mg/g through determination.
