多重荧光PCR快速检测食源性致病菌的研究进展

摘    要:食源性疾病多由食源性致病菌引发,威胁个人健康及全球食品安全,因此寻找有效、可靠的食源性致病菌高通量检测方法对于确保食品安全具有重要意义。鉴于传统检测技术耗时长、效率低等问题,PCR等分子生物学技术应用于食用致病菌检测领域越来越广泛,本文在普及食用性致病菌知识的基础上,着重对多重荧光PCR技术原理及在食用性致病菌检测的应用进展进行综述,以期为控制由食用性致病菌引发的食品安全隐患提供理论参考。

Abstract:Foodborne diseases are mostly caused by foodborne pathogens, threatening Personal Health and Global Food Safety. So it is of great significance to find effective and reliable high-throughput detection methods for foodborne pathogens to ensure food safety. Since traditional detection techniques were mostly time consuming and low efficiency, PCR and other molecular biology techniques are more and more widely used in the field of detection of edible pathogenic bacteria. Based on popularizing the knowledge of edible pathogenic bacteria, this paper reviewed the principle of multiple fluorescent PCR and its application in the detection of edible pathogenic bacteria, in order to provide a theoretical reference for the control of food safety risks caused by edible pathogenic bacteria.
