特克塞尔、无角陶塞特、白萨福克肉羊肉质指标的比较研究

摘    要:以特克塞尔、无角陶赛特、白萨福克肉羊为实验对象,对其肌肉中的pH、肌糖原(Gly)、游离脂肪酸(FFAs)、肌酸激酶(CK)等几个指标进行测定。实验结果表明,3个品种羊肌肉中pH差异不显著(P>0.05)。特克赛尔和无角陶赛特Gly含量较高(P<0.05)。特克赛尔羊的FFAs含量最低(P<0.05),特克赛尔和白萨福克羊肌肉中CK较无角陶赛特高(P<0.05)。综合以上肌肉指标,特克赛尔羊的肌肉品质较好。

Abstract:In this trial,ph,Glycogen(Gly),Free fatty acids(FFAs) and Creatine kinase(CK) of muscle were selected to evaluate the meat quality of Texel,Polled Dorset and White Suffolk sheep.The results showed:pH of muscle was not significient(P>0.05),Texel and Polled Dorset's Gly were higher than White Suffolk's(P<0.05).Texel's FFAs was lowest than others'(P<0.05),Texel and White Suffolk's CK were higher than Polled Dorset sheep's(P<0.05).Meat quality of Texel sheep was better.
