摘    要:淀粉糖是淀粉深加工最重要产品之一;酶是具有生物催化功能生物大分子,在淀粉糖制备中生物酶技术得到广泛应用。该文对制备淀粉糖常用的酶,如α-淀粉酶、β-淀粉酶、葡萄糖淀粉酶、普鲁兰酶、异淀粉酶、α-葡萄糖转苷酶、β-葡萄糖苷酶、环状糊精葡萄糖转移酶等进行介绍。

Abstract:Starch sugar is one of the most important product of starch deep process.Enzyme is a kind of giant molecule,which having biological catalysis,and is applied widely in starch sugar processing.En- zymes used in the preparation of starch sugar,such asα-amylase,β-amylase,glucoamylase,β-gluco- sidase,isoamylase,pullulanase,glucose isomerase,transglucosidase,and cyclodextrin glucanotrans- ferase,are discussed in this paper.
