黑米酒(黄酒)生物性腐败的机理探讨

摘    要:对黑米酒(黄洒)的生物性腐败的现象、原因及腐败机理进行了分析,对黑米酒(黄酒)中的腐败对象菌进行了分类,为黑米酒(黄酒)杀菌工艺条件的制定提供了科学依据。同时对GB/T13662《黄酒》国家卫生标准的缺陷进行了探讨。

Abstract:The phenomena, reason and mechanism of biological decay in black rice wine were analyzed. The strains which directly cause the decay in black rice wine were classified for science supporting of drawing up the sterilized process condition of black rice wine. Meanwhile the defects of health standard in GB/T13662 "rice wine" were also discussed.
