| 摘 要： | 介绍了天然β－乳球蛋白（β-Lg)的结构，叙述了β-Lg的热变性聚集机理，包括热变性聚集机理，热变性的结构变化及影响β-Lg热变性聚集的因素，最后介绍了β-Lg热变性聚集在乳品加工业中的应用。
