摘    要:以新鲜山药、东北茶藨子为主要原料,添加白砂糖、黄原胶,制作复合浊汁饮料。试验结果表明,其最佳配方为:山药原浆20%、东北茶藨子原汁15%、白砂糖8%、黄原胶0.08%。最终制得口感润滑、酸甜适口、色泽协调、营养丰富、组织状态稳定的复合饮料。

Abstract:Fresh Chinese yam and Ribes mandshricum were used to prepare a cloudy compound beverage,with the addition of white granulated sugar and xanthan gum.The results of experiments showed the optimum formula of the beverage as:20% Chinese yam juice,15% Ribes mandshricum juice,8% white granulated sugar and 0.08% xanthan gum.The compound beverage obtained was featured by smooth taste,pleasant sweetness and sourness,well-matched color,rich nutrients and stable texture.
