| Abstract: | Glutathionet one of the important biological medicines and food additives, can quickly improve the immune capacity of human bodies. In this mini-review, the physio gical functions of glutathione and the application prospect of glutathione in the fields of clinics and food add ives were summarized. The emphasis was focused on the progress and problems on glutathione production by enzymatic method and fermentation. In the end, the current research on glutathione production in China was b efly described. |
