摘    要:兰莓是花色素苷、多酚类物质和黄酮类化合物的优良原料。兰莓提取物既有着色作用,其花色素苷和多酚类物质还有很强抗氧化能力,且其抗氧化活性系数优于其它植物。

Abstract:Blueberries are a good sources of anthocyanins (110-260mg/100g fresh berries), phenolic acids (150-945mg/100g fresh berries), and flavonoids (40mg/100g fresh berries). The blueberry extract in addition to colorful characteristic, its anthocyanins and polyphenols possess potent antioxidant properties. Its antioxidant activity more then other plant products, the oxygen radical absorbance capacity (ORAC) about 10.3-51.9 μmol VE equivalents /g fresh berries.
