气调保鲜实验箱对采后灵武长枣贮藏品质的影响

摘    要:针对灵武长枣采后失水软化、酒化、腐烂等问题及其对贮藏环境参数要求高、保鲜难度大等现状,以八成熟灵武长枣为试材,分别采用气调保鲜箱和普通冷库进行贮藏处理,研究2种贮藏环境的波动差异情况及其对枣果贮藏品质的影响。结果表明:气调保鲜箱温度波动±0.2 ℃、气体成分波动±1.0%、湿度波动±2%,解决了贮藏环境各项参数的精准控制问题;枣果经气调保鲜箱贮藏60 d后烂果率仅11%、可溶性固形物为23%、硬度11 kg/cm2、可滴定酸含量0.34%、丙二醛含量为0.003 5 μmol/g、相对电导率72%,酸甜可口,营养优质; 与普通冷库贮藏相比,气调保鲜箱可显著提升枣果的贮藏品质。

Abstract:The purpose of the study is to solve the problems of easy to loss water, soften, decay and the status quo of high claim of storage environment parameters and difficult to keep fresh of Lingwu long jujube.The experiment used the eight mature LingWu long jujube as the test materials, the storage treatment was carried out by air - conditioning and ordinary cold storage and the fluctuation of two storage environments and its effect on storage quality were studied.The results show that Environmental fluctuations of modified atmosphere box about Temperature±0.2℃/gas composition ±1.0%/humidity±2%, thus solved the problem of controlling the storage environment parameters accurately; Jujube fruit were the sweet and sour taste, nutrition quality after 60 days stored in modified atmosphere box, and rotten fruit rate only 11%, soluble solids 23%, hardness 11 kg/cm2, titratable acid content 0.34%, malondialdehyde content of 0.0035μmol/g, relative conductivity 72%. Compared with common cold storage, the storage quality of jujube fruit can be improved significantly.
