洋河大曲主要菌系的研究

摘    要:对洋河大由3种大曲浸提液主体微生物区系进行研究。结果表明,洋河大曲中的细菌种类最为丰富,共分离到15株,其中芽孢杆菌属6株;霉菌12株,其中,曲霉属6株,该种类较丰富,但其在数量上并不具优势;分离到酵母菌8株,其中,毕赤酵母属3株,其数量占酵母菌总数的80%左右;洋河大曲与传统浓香型大曲中的主体微生物菌系之间存在一定的...

Abstract:Three kinds of extract solution of Yanghe Daqu were selected to investigate their main microflora.The results showed that there were rich bacterial species(15 strains isolated including 6 Bacillus strains),there isolated 12 mildew strains including 6 Aspergillus strains but their quantity was not predominant,and there isolated 8 yeast strains including 3 Pichia strains(their quantity accounted for 80 % of total yeast quantity).As a result from the above studies,it was found that the difference of main micro...
