馥郁香型白酒的发展历程

摘    要:白酒香型的发展是历史发展的必然结果。从酒鬼酒、湘泉酒香型发展中主要问题的提出、研究、定型和完善等各个阶段来阐述馥郁香型白酒的发展历程,从历史文化、生产工艺特征、感官特点及香气组分特征阐述了馥郁香型白酒的内涵。

Abstract:The development of liquor flavor types is the necessary results of social development.In this paper,the development process of full-bodied-flavor liquor including Jiugui liquor and Xiangquan liquor was reviewed.And the inner meaning of full-bodied-flavor liquor was elaborated from the angle of historical and cultural backgrounds,production techniques characteristics,liquor sensory characteristics,and flavoring compositions characteristics etc.
