| 摘 要： | 论述了糊精经羧甲基化后，所得变性糊精自流动性的改变。经扫描电镜观察其形态结构与未变性前有着明显差别，对观察结果进行了分析讨论，为变性糊精在工业生产应用的可实施性提供了形态学依据。
