清宫酱膳考略

摘    要:清宫酱膳不是固立的表述单元,它与清宫膳食的总体一样,乃是整个清代关乎于此的浓缩,也可谓清代酱膳中的精华所在,并含有多元的烹饪特征,是酱料制作和酱腌、酱汤、酱制工艺、酱物调膳和以酱爆(炒)膳的综合性成品。清宫酱膳汇聚了中国古代酱膳的优秀成果,是中国食俎学研究的一项重要内容。

Abstract:Qing dynasty meal is not a fixed phrase, but a condensed cover term and the essential part of the Qing dynasty palace meal system as a whole, which, as a synthesized product, contains multi-elemental culinary features, such as sauce material processing, sauce seasoning, sauce soup and soy sauce producing, sauce mixing and sauce quick- frying. Qing dynasty palace soy meal is a complexity of excellent achieve- ments, which is an important part of Chinese cuisine worthy of further research.
