摘    要:依据莲子生长、采收特性以及速冻莲子生产工艺、包装形式, 将良好农业规范(good agricultural practices, GAP)与HACCP有机结合应用于速冻莲子生产, 确保其质量与安全。通过莲子种植过程与加工生产过程质量安全风险评估与危害分析, GAP应用于种植过程, 对可能存在的潜在危害进行分析排查; 对生产过程潜在的风险因素, 从物理危害、化学危害、生物危害逐一进行分析, 确定生产工艺中的关键控制点(critical control point, CCP), 通过CCP来控制或者避免显著危害的发生; 采取监控措施保证CCP有效实施, 并在其发生偏离时采取相应的纠偏措施。将GAP与HACCP有机结合应用于速冻莲子的生产过程, 将全面构筑速冻莲子质量安全防线。

Abstract:According to the characteristics of lotus seed growth and harvesting, production process and packaging form of frozen lotus seed, good agricultural practices (GAP) and HACCP were organically combined in the production of frozen lotus seed to ensure its quality and safety. Through the quality and safety risk assessment and hazard analysis of the planting process and the processing and production process of lotus seeds, the GAP was applied to the planting process, and the potential hazards that might exist were analyzed and screened. The potential risk factors of the production process were analyzed from physical hazards, chemical hazards and biological hazards, and the critical control points (CCP) in the production process were determined. The CCP was used to control or avoid the occurrence of significant hazards. Monitoring measures were taken to ensure the effective implementation of the CCP, and appropriate corrective measures were taken when it deviates. The organic combination of GAP and HACCP is applied to the production process of quick-frozen lotus seeds, and the quality and safety line of quick-frozen lotus seeds will be fully constructed.
