云南樱花鲜花营养成分及污染物含量分析与评价

摘    要:目的 分析评价云南樱花鲜花的主要营养成分及污染物含量。方法 分别采用国家标准方法检测云南樱花鲜花的一般营养成分、矿物质及污染物含量。结果 云南樱花鲜花的水分含量为81.1 g/100 g, 蛋白质含量为0.4 g/100 g, 脂肪含量为0.3 g/100 g, 碳水化合物含量为7.0 g/100 g, 膳食纤维含量为10.2 g/100 g。其富含各种矿物质, 如钾、钙、镁、铁、锌。且铅、汞、镉、铬、砷等污染物含量远远低于国家标准GB 2762-2017食品中污染物的限量要求。结论 云南樱花鲜花色泽鲜艳, 花型美观、高碳水化合物、高膳食纤维、高钾、高钙, 高铁, 污染物含量符合国家标准要求, 具有较高的营养价值, 食用性佳, 后续可进行各种云南樱花产品开发研究。

Abstract:Objective To analyze and evaluate the main nutritional components and pollutant content of Cerasus cerasoides blossom. Methods The general nutrient compositions, mineral and contaminant content of Cerasus cerasoides blossom were analyzed by national standard methods, respectively. Results The content of moisture, protein, fat, carbohydrate, dietary fiber of Cerasus cerasoides blossom was 81.1 g/100 g, 0.4 g/100 g, 0.3 g/100 g, 7.0 g/100 g, and 10.2 g/100 g, respectively. It was rich in various minerals such as potassium, calcium, magnesium, iron and zinc, and the content of lead, mercury, cadmium, chromium, arsenic and other pollutants content was far lower than the limit requirement of national standard GB 2762-2017. Conclusion Cerasus cerasoides blossom has bright color, beautiful flower pattern, high carbohydrate, high dietary fiber, high potassium, high calcium and high iron, the pollutant content is lower than the requirements of national standards. It has high nutritional value, good edible, and can be used in various ways.
