海参粉行业标准的制定内容解读

摘    要:目的 分析研究影响海参粉品质的主要技术指标, 为企业和检测部门正确理解和运用《海参粉》水产行业标准提供参考。方法 本研究在介绍海参粉标准基本框架的基础上, 重点分析了《海参粉》水产行业标准主要技术参数制定的内容和依据, 包括感官要求和水分、蛋白质、盐分、海参多糖、海参皂苷等。结果 《海参粉》水产行业标准规定, 氯化物含量为优级品≤1%、合格品≤3%; 蛋白质含量为优级品≥60 g/100 g, 合格品≥50 g/100 g; 海参多糖含量为优级品≥5 g/100 g, 合格品≥2 g/100 g; 海参皂苷含量≥0.1 mg/g; 水分含量规定为≤7 g/100 g。结论 本研究可为企业和检测部门正确理解和运用海参粉行业标准提供参考。

Abstract:Objective To analyze and investigate the main technical indexes affecting the quality of sea cucumber powder, and provide references for enterprises and testing departments to correctly understand and apply the standards of Sea cucumber powder in aquatic industry. Methods On the basis of introducing the basic framework of sea cucumber powder standard, the content and basis of the important indicators of Sea cucumber powder aquatic industrial standard was analyzed, including sensory requirements, moisture, protein, chloride, sea cucumber polysaccharide, sea cucumber glycosides, etc. Results Sea cucumber powder aquatic industrial standard stipulated that the chloride of premium product should be less than or equal to 1%, and the qualified product was less than 3%. The protein for premium grade product should be greater than or equal to 60 g/100 g, and the qualified product was greater than or equal to 50 g/100 g. The sea cucumber polysaccharide for premium grade product should be greater than or equal to 5 g/100 g, and the qualified product was greater than or equal to 2 g/100 g. The content of sea cucumber saponin was greater than or equal to 0.1 mg /g. The water content was defined as less than or equal to 7 g/100 g. Conclusion This study can provide references for enterprises and testing departments to correctly understand and apply the industry standard of sea cucumber powder.
