| Abstract: | In order to improve the accuracy of Kjeldahl method for the determination of fish protein, the conversion factor between amino acid nitrogen and non-amino acid nitrogen in fish protein is analyzed and a series of feasible improvement strategies for the determination of fish protein by Kjeldahl method are discussed in this paper. |
