摘    要:为了使凯氏定氮法更适于鱼蛋白质含量测定,针对鱼肉中非氨基酸态氮和鱼类氮换算蛋白质的系数进行分析,并探讨凯氏定氮法测定鱼蛋白质的可行的改进措施。

Abstract:In order to improve the accuracy of Kjeldahl method for the determination of fish protein, the conversion factor between amino acid nitrogen and non-amino acid nitrogen in fish protein is analyzed and a series of feasible improvement strategies for the determination of fish protein by Kjeldahl method are discussed in this paper.
