摘    要:玉米皮含有大量玉米黄色素和醇溶蛋白;该研究首先对玉米皮进行脱色处理得到玉米黄色素,然后利用微波辅助提取玉米醇溶蛋白,并在单因素试验基础上利用响应面法优化玉米醇溶蛋白提取工艺;结果表明,最佳提取工艺条件为:乙醇浓度75%、液料比12、微波功率450 W、间歇式微波处理5次,共225 s,提取率为73.6%。

Abstract:Corn bran contains large amounts of maize yellow pigment and zein.In this study,the maize bran is decolored firstly to obtain the yellow pigment,and then used the microwave assisted to extraction of zein.On the basis of single–factors experiments,the response surface methodology was used to optimize extraction of zein.The results indicated that the optimum conditions of extraction are:75% ethanol,liquid ratio of 12,the microwave power 450 w,intermittent microwave treatment 5 times of 225 s,extraction rate are 73.6%.
