摘    要:通过分析固体饮料姜茶生产线各环节可能存在的危害 ,确定了关键控制点、关键限值 ,建立了监控程序、纠偏措施、验证和记录程序等 ,从而有效地保证产品品质。

Abstract:Monoglycerides are a series of emulsifier used in food industry, especially in the flour product processing. Monoglycerides have interfacial activities and they can interact with the ingredients in flour, such as starch, protein and lipid. These characteristics can improve the processing and qualities of the products. This paper summarizes the functional properties and the applications of monoglycerides in common flour products. Besides, we have a expectation of the development of monoglycerides.
